This couscous salad does not require any cooking at all. All you need to do is to do some chopping and mixing them up. I like to serve this salad with a simple roast chicken, especially during the weekend. Just pop the chicken in the oven and prepare the salad. Read more . Ingredients:
1 cup instant couscous
1 cup warm water
dressing
3 tbsp lemon juice
2 tbsp hazelnut oil
2 tbsp extra virgin olive oil
1 tsp sea salt
1 tsp freshly ground black pepper
2 roasted red bell peppers (store-bought), chopped
2 tomatoes, diced
1/2 of red onion, diced
1 red chili, chopped
1 tbsp hazelnut oil
1 tsp pomegranate vinegar or red wine vinegar
3 tbsp chopped parsley
1 clove garlic, finely chopped
Directions:
1. Combine and whisk all the dressing ingredients and pour into the couscous. Stir well and add in the water. Set aside until all the couscous absorbs all the dressing and water.
2. Then combine the rest of the ingredients and mix into the couscous mixture. Mix until well combined and season with sea salt, black pepper and top it with some parsley. Serve immediately.
