This easy cous-cous salad is filled with black beans, corn, tomatoes and a splash of lime juice and is perfect for a summer day. Serve chilled
Ingredients:
16 ounces couscous
16 ounces black beans
16 ounces corn
2 tomatoes, diced
1/2 cup finely diced onion
1/4 cup lime juice
1 tablespoon cilantro
Directions:
1. prepare cous-cous as directed on box.
2. move cous-cous to a large bowl.
3. Add remaining ingredients and mix.
4. chill for two hours and serve. Ok to serve warm too. :).
