Ingredients:
4 garlic cloves chopped
3 tablespoon(s) red wine vinegar
1 teaspoon(s) dried oregano
1 teaspoon(s) dijon mustard
3 tablespoon(s) extra-virgin olive oil
1 teaspoon(s) black pepper
1/2 teaspoon(s) salt
1 box(es) couscous prepared per box instructions
1 cucumber diced
1 cup(s) sundried tomatoes chopped
2 cup(s) diced tomatoes
1 1/2 cup(s) feta cheese
1 1/2 cup(s) basil
3/4 cup(s) green onions
1 cup(s) red onions
2 tablespoon(s) sunflower seeds
Directions:
1. While the couscous is cooking, prepare the vinaigrette by combining the first seven ingredients in a shallow bowl.
2. Once the couscous is finished, combine with 1/3 of the vinaigrette in a large bowl. Then add the remaining ingredients and toss until well-coated. Cover and chill for four hours or overnight.
3. If needed, prepare additional vinaigrette to re-dress once ready to serve.
