Couscous & Ham Salad

Delicious, quick and healthy. Great with good french bread and dry white wine. Alternatively, stuff large cored tomatoes.
Ingredients:
1 cup couscous
1/2 teaspoon salt
1/2 lb cubed ham
4 ripe plum tomatoes
12 large basil leaves
2 green onions
1 cup garbanzo beans
1/2 cup stuffed olives
1 tablespoon olive oil
1 tablespoon lemon juice
Directions:
1. Cook couscous according to package direstions.
2. Let stand for 5 minutes.
3. Cube ham.
4. Coursely chop tomatoes.
5. Thinly slice basil and green onions.
6. Rinse, drain garbonzo beans.
7. Fluff couscous with fork in large serving bowl.
8. Stir in ham, tomatoes, basil, onions, beans, olives, oil, and lemon juice.
9. Garnish with basil.
