This recipe was a Near East recipe contest winner. It uses a great combination of flavors like almonds, papaya and spinach not to mention the medley of aromatic spices...enjoy!
Ingredients:
1 box of near east whole wheat couscous
1 15oz. can of black beans (drained and rinsed)
1 c. diced papaya
1 c. shredded spinach leaves
1 minced scallion
2 t. lime juice
2 t. olive oil
1/2 tsp. ground cumin
1/4 tsp. salt
1/8 tsp. cayenne pepper
Directions:
1. Prepare the box of couscous according to the package directions, omitting the butter or oil; let cool 10 minutes.
2. Stir in the rest of the ingredients.
3. Transfer to serving platter and garnish with 1/4 cup chopped smoked salted almonds.
