Couscous Chickpea And Tuna Salad

A Quick and easy salad You could use shredded barbecued chicken in place of tuna
Ingredients:
2 tsp oil
1 punnet cherry tomatoes halved
1 cup couscous
1 cup water boiled
80g baby spinach
400g drained chickpeas
185g tuna in oil drained and flaked
90g feta cheese crumbled
1/3 cup pitted kalamata olives sliced
dressing
2 tblsp olive oil
1 tblsp balsamic vinigar
2 tblsp maple syrup
Directions:
1. Heat oil in med.fry pan on high.Add tomatoes cook 1-2 min until tender,transfer to plate
2. Place couscous in large bowl cover with water.ste aside for about 5 mins. until liquid is absorbed, fluff with fork
3. DRESSING
4. Whisk together all ingrediants in a jug and season to taste
5. Toss spinach,chickpeas,tuna,feta and olives through the couscous, along with the tomatoes and dressing
6. Serve with crusty bread
