Couscous Beet Carrot Salad

tasty raw food couscous salad
Ingredients:
2 cups couscous
2 cups of boiled water
1 tablespoon butter
1 carrot grated
1 fresh beet, peeled and grated
half a cup of walnuts
half a cup of sultanas
2 tablespoons balsamic vinegar
2 tablespoons olive oil
half a teaspoon of cracked black pepper
Directions:
1. put the couscous in a bowl
2. pour in the boiling water and let sit for 5 min
3. gently fluff the couscous with a fork
4. fluff in the butter
5. gently stir in carrot,beet,walnuts and sultanas
6. mix (shake)in a small jar with lid, the balsamic,olive oil and black pepper
7. gently mix dressing into salad
8. serve
