Delicious couscous; can be serve with any grilled meat, fish or just on its own
Ingredients:
50 g couscous
100 ml chicken stock
1/2 tsp garlic
1/2 tsp cumin
1/2 tsp coriander
3 tbs parsley
2 spring onion
1 tbs olive oil
30 ml lemon
1 tomatoe
Directions:
1. Chop the parsley,tomatoe and spring onion.
2. Bring the chicken stock to boil and add a pinch of saffron if you like.Add the lemon juice
3. In a pan put the olive oil, garlic and the spices and fry it over a gentle heat for 2-3 min then add it to the chicken stock.
4. Remove from the heat and add the spring onion finely sliced then the couscous.Stirr once and then cover it and leave it for 5-8 min.
5. Add the parsley and tomatoe and stirr witha fork to make the couscous fluffy.
