Cous Cous Salad

Serves 8, adapted from Asda magazine June 2010 slimming world friendly use nuts or seeds as healthy extras and syn point the apricots
Ingredients:
1 red onion (chopped)
low-fat cooking spray
1 teaspoon ground coriander
1 teaspoon ground cumin
1/2 teaspoon ginger
200 g couscous
2 tablespoons lemon juice
375 ml boiling water
150 g dried apricots (chopped)
1 sweet red pepper (pointed diced)
100 g pistachios (or sunflower seeds roughly chopped)
3 tablespoons flat leaf parsley
Directions:
1. Cook onion in low fat cooking spray until soft, stir in spices and cook for 1 minute. Add the cous cous, stir and remove from heat.
2. Add the apricots, pour on boiling water, over and leave to cool.
3. Place in a bowl and fluff up with a fork, add lemon juice, pepper nuts and parsley, stir well.
