a healthier take on the rosti,
Ingredients:
2 large egg white
1 zucchini
1 carrot
1 potato
1 teaspoon salt and pepper
1/2 clove garlic
1/2 onion
Directions:
1. grate the potato, courgette and carrot and dry in a clean tea towel, squeeze tightly, then repeat with a dry tea towel.
2. mix the egg white with the crushed garlic clove and the onion(finely grated) and the salt and pepper
3. stir the grated veg into the egg mix and make sure everything is well covered with egg
4. form 8 cakes and place on a baking tray, cook in a pre rheated oven at 200 celsius for 30 minutes or until golden brown
