I found this in a Gooseberry Patch casserole cookbook and I'm posting for safe keeping. It was originally submitted by Renee Spec from Crescent, PA. Any kind of pie filling will work with this recipe.
Ingredients:
1 1/2 cups sugar
3/4 cup butter
2 cups all-purpose flour
1 teaspoon baking powder
2 eggs
3/4 cup milk
1 (14 1/2 ounce) can cherry pie filling (or any other kind of fruit pie filling) or 1 (14 1/2 ounce) can apple pie filling (or any other kind of fruit pie filling)
Directions:
1. Preheat oven to 350.
2. Combine sugar, butter, flour and baking powder in a mixing bowl; mix well with an electric mixer on Medium speed until mixture is crumbly.
3. Set aside 1 cup for the topping.
4. Beat together eggs and milk.
5. Stir into crumb mixture that is still in the mixing bowl.
6. Pour into a lightly greased 9x9 baking pan.
7. Spread pie filling over the top and sprinkle with reserved 1 cup of topping.
8. Bake, uncovered, for 45 minutes or until golden.
