Potato Soup with sour cream, celery, onions (taken from Feingold members site)
Ingredients:
3 cups diced potatoes
1/2 cup diced celery
1/2 cups diced onions
1 1/2 cups water
1 1/2 cups chicken broth
1/2 tsp salt
2 cups skim milk
2 tbls flour
1 cup fat free sour cream
1 tsp chives
Directions:
1. Combine potatoes, onions, celery, water, and buoillon cubes and salt into stock pot.
2. Cook covered until tender, about 20 minutes. Don't overcook potatoes.
3. Add 1 C milk and heat.
4. Mix sour cream, 2 T flour, chopped chives and 1 C milk in separate bowl.
5. Gradually stir in sour cream mixture.
6. Cook over low heat, stirring constantly until thick.
