Country Pork Chops

An easy one skillet meal using winter vegetables. This recipe calls for commercial spaghetti sauce, but of course you can use or own.
Ingredients:
1/4 cup olive oil
2 yellow squash, cut into 1-inch chunks
1 zucchini, cut into 1-inch chunks
1 onion, cut into 1/4-inch slices
4 pork loin chops (about 1-inch thick, 1 1/2 lbs total)
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 lb mushroom, quartered
28 ounces spaghetti sauce
1 teaspoon dried oregano
Directions:
1. In a large skillet, heat oil over medium-high heat. Add yellow squash, zucchini, and onion. Cook 4 to 6 minutes, or until vegetables are tender, stirring occasionally. Transfer vegetables to a bowl and set aside.
2. Season pork chops with salt and pepper. In the same skillet, brown pork chops over medium-high heat about 2 minutes on each side. Return vegetables to the skillet, reduce heat to low, and stir in mushrooms, spaghetti sauce, and oregano.
3. Cover and cook 30 to 35 minutes, or until pork chops are cooked through.
