A nice to have with tea cake! A quick throw it all together cake. Ingredients:
175g(6oz) butter or margarine |
175g(6oz) castor sugar |
3 large eggs |
225g(8oz) self-raising flour, sieved |
25g(1oz) ground almonds |
75g(3oz) mixed chopped nuts |
2 x 5ml spoons (2 teaspoons) milk |
glaze |
2 x 15ml spoons (2 tablespoons) apricot jam, heated and sieved with |
i x 15ml (1 tablespoon) water |
assorted nuts to decorate |
Directions:
1. Preheat oven to 160c gas 3 2. put all ingredients in a mixing bowl and mix well with a wooden spoon until well mixed 3. pour into a greased and bottom lined 1kg (2lb) loaf tin 4. cook on the middle shelf for 1 1/4 - 1 1/2 hours 5. Leave in the tin for a few minutes before turning out. Brush the top of the cake with a little of the glaze, arrange nuts on top and brush with the remaining glaze. 6. ENJOY |
