Country Inn Pumpkin Doughnuts

Makes a nice Fall or Thanksgiving Breakfast, dessert or snack. Simple to make; and the delicious seasonal flavour of pumpkin make this a real treat to enjoy!
Ingredients:
2 eggs, beaten
1 cup sugar
2 tablespoons oil
1/2 cup buttermilk
1 cup fresh pumpkin puree or 1 cup canned pumpkin
4 cups flour
2 teaspoons salt
4 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon nutmeg
1/2 teaspoon cinnamon
1/4 teaspoon ground ginger
powdered sugar, for coating
Directions:
1. In A large bowl, beat eggs and sugar until light and fluffy.
2. Add oil, pumpkin and buttermilk.
3. Mix dry ingredients together and add to egg mixture.
4. Chill 1 hour.
5. Turn out on floured board and roll to 1/2-inch thickness.
6. Use a donut cutter to cut donuts.
7. Deep fry at 375°F.
8. until brown on one side.
9. Turn over.
10. Brown other side.
11. Drain well on paper towels and roll in sugar.
