country cornmeal drop biscuits |
ingredients |
1 cup all-purpose flour |
1 cup yellow cornmeal |
2 tablespoons sugar |
2 teaspoons baking powder |
1/2 teaspoon salt |
3 tablespoons cold butter |
2 tablespoons canned green chilies, chopped |
2 tablespoons canned pimiento peppers, chopped |
1 egg, beaten |
1/2 cup milk |
optional: (for top) |
1/2 tsp poppy seeds |
1/2 tsp sesame seeds |
in a mixing bowl, combine the flour, cormeal, sugar, baking powder, and salt. cut in the butter until the mixture is crumbly. add the chilies and pimientos. |
stir in the beaten egg and milk, just until combined. |
drop by large spoonfuls, about 2 tablespoons each, onto an oiled baking sheet. bake the biscuits in a 450 degree oven for 13 to 15 minutes. |
optional (but good) |
brush tops of biscuits with egg white. combine poppy seeds and sesame seeds in a small bowl, and sprinkle seed mixture evenly over biscuit tops. |
