This came from the cookbook Retro Diner Comfort Food from the American Roadside... REALLY good! I added thick bacon and used Asiago cheese bread.
Ingredients:
3 well-beaten eggs
1 cup milk
1 dash salt
3 tablespoons melted butter
8 slices white bread
4 slices cooked chicken
4 slices monterey jack cheese (thick slices)
4 slices cheddar cheese (thick slices)
1/4 cup oil (vegetable is okay)
Directions:
1. In shallow baking dish combine eggs, milk, and salt.
2. Butter four slices of bread.
3. Top buttered bread with chicken and cheese slices.
4. Cover with remaining slices of bread.
5. In a skillet (I prefer cast iron) heat oil.
6. Dip sandwiches carefully in egg mixture and grill in skillet until both sides are golden brown.
7. Serve with a side salad or a light soup.
