Shepherd's Pie with Ground Beef
Ingredients:
1 1/2 lbs potatoes
1 carrot
1 celery stalk
1 medium onion
1 tbs flour
1 tsp rosemary
1 tsp thyme
1 cup beef broth
1 pound ground beef
1 tbs margarine
1 pepper
1 cup cheddar cheese, or parmesan
3 tbs canola oil
2 tbs margarine
1 tbs paprika
Directions:
1. Chop potatoes into 1 inch cubes. Fill pot with water and bring to boil. Add potatoes and return water to boil. Turn down heat to medium and simmer for about 15 minutes, until potatoes are tender.
2. While potatoes are cooking, prepare vegetables. Dice veggies and place in bowl.
3. When potatoes are tender, remove from water and place in large bowl, reserving 1/2 cup of the water. Mash potatoes with 1 tbs margarine and the water. Add pepper as desired. Set aside.
4. Heat canola oil an a large pot over medium heat. add veggies and stir until they are coated.
5. Reduce heat to medium low and cook, stirring occasionally, until tender, about 15 minutes.
6. Preheat oven to 400.
7. Increase heat to medium high and add ground beef. Use a wooden spoon to break apart meat while cooking. Cook until no longer pink, about 5-10 minutes. Tilt pot and allow excess fat to run to one corner. Spoon out excess fat.
8. Add flour to the mixture. Cook for a couple of minutes while stirring.
9. Add the beef stock, thyme, rosemary and nutmeg and cook for another 5 minutes, stirring until gravy thickens. Add pepper to taste.
10. Pour mixture into casserole or baking pan. Cover with mashed potatoes and fluff top of potatoes with fork.
11. Cut 2 tbs margarine into small pieces and sprinkle over the top of the potatoes. Cover with paprika.
12. Add cheddar cheese to top.
13. Place onto a rack in the center of the oven. Cook for 30 minutes, then remove and allow to rest for 10 minutes.
