Cottage Cheese Salad

A great Low GI lunch. The apples add a sweet taste and a needed crunch to an otherwise creamy salad. This salad can be eaten as light lunch, used a side salad, even wrapped up in a pita.
Ingredients:
2 cups low fat cottage cheese
1/2 cup carrot, grated
1/2 cup celery, grated
1/2 cup radish, grated
2 green onions, chopped
1 large apple, cored and chopped
2 teaspoons ginger, minced
2 teaspoons soy sauce
1 garlic clove, minced
1 teaspoon rice vinegar
1/2 teaspoon toasted sesame oil
Directions:
1. In a bowl, combine cottage cheese, carrot, celery, radish, green onions, apple, ginger, soy sauce, garlic, vinegar & sesame oil.
2. Serve.
