Cottage Cheese Radish Salad

Makes a nice light lunch.
Ingredients:
2 scallions, sliced, including the crisp part of the green
4 radishes, thinly sliced
1 cucumber, quartered lengthways and thinly sliced
1 cup cottage cheese
4 tablespoons sour cream
3 lettuce or 3 spinach leaves
Directions:
1. Mix together the scalllion, radishes, cucumber, cottage cheese, and sour cream. Place a few leaves of lettuce or spinach on a serving dish and scoop the cottage cheese mixture onto it. Serve.
