Easy, Low Claorie Quiche
Ingredients:
500 g 1% cottage cheese
300 g frozen chopped broccoli, thawed, well drained
3/4 cup grated light cheddar cheese
1/4 cup roasted red peppers, chopped
4 eggs, beaten
3 tbsp light parmesan cheese
3 tbsp dry bread crumbs
Directions:
1. Mix all ingredients until well blended
2. Pur into 9 inch pie plate with no stick cooking spray
3. Bake at 350 F for 45 minutes or until center is set
4. Let stand 10 minutes before cutting into 6 slices to serve
