This cottage cheese dough is practically no-fail - forgiving, easy to roll. It shapes and freezes like a dream. The texture is light and flaky and the taste a bit on the tangy side, which lends itself to both sweet and savory fillings. Read more . You can freeze the dough or the final product which is what I like to do. Use this for my Curried Mushroom Turnovers recipe or use with what ever filling you'd like! Get creative and try mixing in some cheese and herbs to make bread twists! I love this dough and hope you do too!
Ingredients:
8 ounces butter, room temperature
8 ounces low-fat cottage cheese, room temperature
2 1/4 cups all-purpose flour
1/2 teaspoon salt
Directions:
1. Combine butter and cottage cheese until well blended. Add flour and salt and mix until a smooth dough is formed (You can use a food processor). Form dough into 3 workable size disks, cover with plastic wrap and refrigerate at least 1 hour. Dough may be refigerated 2 days.
