Cottage Cheese Pancakes

A very simple pancake. Light and tasty. And money saving.
Ingredients:
3 eggs, separated
3/4 c. small-curd cottage cheese
1/4 c. flour
1/4 tsp. salt
butter
strawberry jam or maple syrup
Directions:
1. In medium bowl, beat egg whites until stiff but not dry. Set aside.
2. In separate bowl, beat egg yolks until light and lemon colored. Lightly but thoroughly stir in cottage cheese, flour, and salt. Fold in egg whites.
3. Drop by small spoonfuls onto butter hot griddle. Cook until bubbles appear on surface and bottom is golden brown. Turn pancakes. Cook until second side is browned. Serve immediately with jam or syrup.
