Cottage Cheese Cornbread

Ingredients:
1 cup cornmeal
1 cup flour
2 teaspoons baking powder
1/2 teaspoon salt
2 tablespoons brown sugar
2 eggs
1 cup buttermilk
1 cup cottage cheese
1/4 cup canola oil
1 cup frozen corn
Directions:
1. Preheat oven to 375°F
2. In a medium-sized bowl, combine the cornmeal through to the salt and set aside.
3. In another bowl, mix up the sugar, buttermilk, cottage cheese and oil and then blend it with the dry ingredients.
4. Stir in corn.
5. Pour batter into a buttered baking dish and bake for 30-40 minutes or until the centre comes out clean.
