Cottage Cheese Casserole

Pasta dish with plenty of vegetables. This could be also cooked in the oven too.
Ingredients:
2 1/2 teaspoons margarine
1/2 cup fresh mushrooms, chopped
1/2 cup onion, chopped
1/2 cup celery, chopped
1 garlic, colve minced
3/4 cup low-sodium tomato paste
4 cups macaroni
1 1/4 cups water
2 teaspoons salt
1 teaspoon sugar
1/4 cup parsley, chopped
2 cups low-fat low-sodium cottage cheese
1/3 cup grated parmesan cheese
Directions:
1. Saute mushrooms, onions, celery, and garlic in margarine in a medium skillet over medium heat.
2. Combine sauteed vegetables, marjoram, tomato paste, macoroni, water, salt, and sugar.
3. Put half of macoroni mixture in slow cooker,or casserole dish.
4. Top with 1 cup cottage cheese, half of parmesan cheese, and half of the parsley.
5. Repeat layers.
6. Cover, and cook on high in the slow cooker for 4-5 hours, or bake in the oven until done.
