Costa Rican White Rice

This is the way my suegra used to make rice every day in Costa Rica.
Ingredients:
1 cup long-grain white rice
1 tablespoon corn oil or 1 tablespoon canola oil or 1 tablespoon vegetable oil
1/2 carrot, diced small
1 -2 garlic clove, minced
salt
Directions:
1. Heat oil over medium heat.
2. Add garlic, but don't let it brown.
3. Add rice and cook for about 1 minute, stirring constantly.
4. Add 2 cups water, cook uncovered and get a strong boil going for a couple of minutes.
5. Add carrots and salt to taste, reduce heat to low and cover for 10 minutes.
