Cornmeal Porridge

The return of porridge with a diabetic spin
Ingredients:
6 oz cornmeal
11/2 pt soy milk or 4.5 cups 2% milk
1 stick cinnamon
1/2 tsp freshly grated nutmeg
5 drops vanilla or (imitation)
8 packs of splenda or raw sugar cane to taste
Directions:
1. Mix the cornmeal and soy milk thoroughly in a saucepan, place over a medium heat and bring to the boil,
2. stirring constantly until smooth and thick.
3. Lower the heat, add the spices and flavouring of vanilla add splenda or raw cane sugar. sweeten to taste
4. Continue to cook for a further 10–12 minutes stirring occasionally.
5. Remove the cinnamon stick before serving.
6. Serves 4
