Jamaican Cereal Breakfast
Ingredients:
1/2 cup yellow cornmeal (coarse or fine)
2 1/2 cups water
1/2 cup reduced fat milk
8 tbsp sugar
1/4 tsp. salt
1/4 tsp. nutmeg (ground)
1/4 tsp. cinnamon (ground)
1/2 tsp. vanilla flavoring
Directions:
1. Mix cornmeal in 1/2 cup water
2. Bring remainder of water and milk to boil and stir in cornmeal and salt
3. Cook for about 10-12 min.
4. Turn off fire
5. Add milk
6. Add nutmeg, cinnamon and vanilla.
7. Sweeten to taste
8. Serve hot
