A great pizza dough made with polenta and cornmeal that taste out of this world for a great taco pizza, just like eating a taco but as a pizza!! So easy to make! No rising involved and bake as soon as make or refrigerate for future use. Read more . This makes one 11-inch pizza or can be made smaller. Use 11 inch pizza pan/stone/bakeware. Kid-Approved!!
Ingredients:
1/4 cup yellow cornmeal
1/4 cup polenta (corn grits)
1 cup all-purpose flour
2 tsp baking powder
1 tbsp sugar or honey
1/2 tsp salt
1/2 cup water
2 tbsp extra virgin olive oil
*additional corn grits (optional)
Directions:
1. Preheat oven to 425F degrees
2. In a medium bowl, mix all dry ingredients.
3. Make a well in the middle and add wet ingredients.
4. With a fork, throughly blend into dough.
5. On a floured surface, knead dough for eight minutes until dough is elastic.
6. Let it rest for 30 minutes.
7. On a floured surface, roll out dough into 12 inches round.
8. Grease pizza pan with evoo and sprinkle corn grits onto pan.
9. Transfer dough to prepared pan and prick with fork through out dough.
10. Bake for 10-12 minutes.
11. While hot add your favorite toppings (taco recipe to follow!)
12. Return to oven till cheese is melted and Serve!
