Yum! Try this bread toasted. Definitely use the stone-ground cornmeal; it makes a difference in the texture. And don't forget the vital wheat gluten; 15 grams is equal to 5 teaspoons.
Ingredients:
1 1/2 cups water
2 tablespoons unsalted butter
1/4 cup honey
3 1/2 cups bread flour
1/2 cups cornmeal
1/2 cup dry buttermilk powder
15 grams vital wheat gluten
1 1/2 tsp. salt
1 tablespoon fast-rise yeast
Directions:
1. Add all ingredients to bread machine as instructed in owner's manual.
2. Select Basic Large loaf and Dark crust.
