Cornmeal & Bacon Pancakes

From the Stonehurst Inn in New Hampshire
Ingredients:
1/3 cup yellow cornmeal
1 cup all-purpose flour
1 teaspoon salt
2 teaspoons baking powder
1 egg
1 1/4 cups milk
1 tablespoon bacon fat, melted
2 slices bacon, cooked and crumbled
Directions:
1. Mix together cornmeal, flour, salt, and baking powder.
2. In a separate bowl, beat the egg, add milk, then bacon fat.
3. Stir this mixture in with the dry ingredients, mixing well. The batter should be fairly thin; add more milk if necessary. Finally, mix in bacon.
4. Cook pancakes in a skillet or griddle and serve with butter and maple syrup.
