Most people that grew up in my hometown will tell you they loved these as kids. I was so glad to find a recipe in an old community recipe book - my son will love them, too!
Ingredients:
6 cups cornflakes (or 5-1/2 cups original kellogg's special k)
1 cup sugar
1 cup clear karo, or other light corn syrup (actually blackburn syrup tastes the best, if you can find it)
1 tablespoon butter
1 tsp vanilla extract
1-1/4 cup smooth peanut butter (best is the kind you mix up yourself)
Directions:
1. Pour cornflakes into a big bowl. Lightly spray 13x9 casserole dish.
2. If using unmixed peanut butter, spoon into bowl with 1 to 1-1/2 tablespoons sugar and mix with hand mixer.
3. Combine sugar and syrup in small pot. Heat on low, stirring constantly, until sugar is melted.
4. Remove from heat; stir in butter and vanilla.
5. Add peanut butter and stir well.
6. Pour mixture over cornflakes and stir gently until well coated.
7. Spread in prepared dish.
8. When completely cool, cut into squares.
