Corned Beef Hash

Why eat hash out of a can? It's easy to make from scratch & tastes delicious.
Ingredients:
3 -4 lbs corned beef (uncooked)
2 -5 baking potatoes, cut into 1/2 inch dice (about 2 pounds)
2 tablespoons olive oil
1 medium onion, thinly sliced
1 red bell pepper, thinly sliced
4 garlic cloves, minced
salt & pepper
1 (15 ounce) can tomato sauce
1 tablespoon hot sauce (such as tabasco)
Directions:
1. Cook corned beef according to instructions on package. This will take 3-4 hours.
2. Remove beef from cooking liquid, reserving liquid.
3. When beef is cool, cut into 1/2 inch dice.
4. When cooking liquid has cooled to lukewarm, add potatoes & soak for about 15 minutes to soften.
5. Heat oil in a large nonstick skillet. Remove potatoes from liquid with a slotted spoon & add to skillet. Cook over medium heat until softened (about 10 minutes).
6. Note: stir frequently throughout entire cooking process to prevent sticking.
7. Add onion and bell pepper and cook until softened (about 5 minutes).
8. Add beef and cook until browned (about 5 minutes).
9. Add garlic and salt & pepper to taste. Cook for another minute or so until garlic is fragrant.
10. Add tomato sauce and hot sauce. Simmer over medium low heat until sauce thickens (about 10 minutes).
11. Spoon hash onto plates and serve with fried eggs on top.
