Crock Pot favorite! Omit spices if meat comes with a seasoning packet. Allspice gives a lot of the kick if the packet doesn't seem to be enough.
Ingredients:
1/2 cup onions, chopped
1/2 cup carrots, chopped
3 lbs beef brisket, corned
1 cup malt vinegar
2 teaspoons mustard seed
2 teaspoons coriander seed
2 teaspoons whole peppercorns
1 teaspoon dill weed
1 teaspoon ground allspice
1 teaspoon bay leaf
3 large onions, cut in wedges
1 lb carrots, cut in 2 lengths
1 1/2 lbs potatoes, cut small
3 lbs cabbage, cut in wedges
Directions:
1. Layer 1/2 cup of both carrots and onions in the bottom of the crock pot then lay beef, with packaged liquid, on top (fat side down)
2. Pour vinegar and spices over meat
3. Add water to cover beef
4. Add onion wedges, 2 carrots, and cut potatoes to pot then add cabbage last
5. Cook in crock pot on low 8-10 hours
6. Serve with vegetables on the side and beef cut cross-grain into slices
