This is very tasty. A family favorite for several years. Nice salad for a hot day. Enjoy
Ingredients:
1 box jiffy corn muffin mix, prepared as directed, cooled and crumbled
1/2 c. pickle relish (not salad cubes)
1/2 c. pickle juice from relish
1 chopped red onion
1 chopped bell pepper
2 chopped fresh tomatoes
2 jars real bacon bits (i suggest the tall hormel jars)
1 pint mayonnaise
Directions:
1. Layer half cornbread, pickle relish, pickle juice, onion, bell pepper, tomatoes, bacon bits and spread with half of mayonnaise.
2. Repeat layers.
3. Chill before serving.
