My mom gave me this recipe. I previewed all other like ones on this site. Mine has fewest ingredients, so I look forward to tweaking mine w/ others to enhance it.
Ingredients:
1 cup yellow cornmeal
1 cup all-purpose flour
1/4 cup sugar, if desired
4 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
1 egg
1/4 cup shortening
8 ounces cornbread
3 green onions, fresh, chopped
1 bell pepper, chopped
1 tomato, chopped
1/2 cup mayonnaise
1/2 teaspoon salt
2 teaspoons mustard
1/2 teaspoon pepper
Directions:
1. Cornbread:.
2. Combine dry ingredients.
3. Combine others. Mix both together.
4. Bake in greased 8 square baking pan in preheated 425 deg. oven 20-25 minute.
5. Salad:.
6. Crumble cornbread in bowl.
7. Add onion, pepper, & tomato.
8. Mix mayo, mustard, pepper, salt.
9. Cooked, crumbled bacon, optional.
10. Pour over, stir & chill.
11. (My cornbread recipe is off of Aunt Jemima's yellow cornmeal).
