So I'm posting it here for everyone, and so I'll never lose it. These are not dry in any way,they come out almost cake-like. Try them with grape jelly or honey butter. I'll never use a different recipe again.
Ingredients:
1 cup all-purpose flour
1 cup yellow cornmeal
1/3 cup sugar
3 teaspoons baking powder
1 teaspoon salt
1 cup cream-style corn
1/2 cup mayonnaise
3 tablespoons vegetable oil
1 egg
2 tablespoons diced onions (optional)
Directions:
1. In a small bowl,combine dry ingredients.
2. Make a well in the center.
3. Add the remaining ingredients;stir just until blended.
4. Spoon into greased muffin cups.
5. Bake at 400 for 20 minutes or until a toothpick come out clean.
6. Remove to a wire rack;serve warm.
