This recipe comes from the 'Martha White' cornmeal sack. It's really a good recipe.
Ingredients:
2 eggs, slightly beaten
1 cup milk
1/4 cup oil or melted shortening
1 1/2 cups yellow self-rising corn meal mix
1 cup all purpose flour
1/4 cup sugar (1/2 cup if you like sweet)
1/4 cup vegetable oil
Directions:
1. Preheat oven to 450 degrees F. Pour Vegetable Oil into an iron skillet. In a large bowl, combine all ingredients; mix well. Pour Batter into greased pan. Bake at 450 degrees for 20 to 25 minutes. Batter can be baked in muffin cups or cornsticks pan. Lightly brush either pan with vegetable oil or use Cake Release which works great, fill each cup 2/3 full, bake at 450 degrees for 15 to 20 minutes or until a toothpick inserted in center comes out clean.
