Corn Summer Salad

Ingredients:
1/4 c. lime juice
1 tbsp honey
1 jalapeno, seeded & finely chopped
3 tbsp fresh cilantro (or 1 tbsp fresh mint)
1/4 tsp salt
6 fresh ears of corn, husked & cleaned (or 3 c. frozen whole kernel corn, thawed)
1-1/2 c. baby spinach leaves
1 lg. tomato, seeded & chopped
1 lg. seeded, chopped cucumber
Directions:
1. In a large bowl, whisk together lime and honey until well combined. Stir in jalapeno, cilantro & salt.
2. Carefully cut corn kernels off cobs. Add to lime mixture. Stir in spinach, tomato & cucumber. Serve immediately.
