I started making this soup with leftover barbeque meat, and it has evolved into something my whole family looks forward to after family barbeques.
Ingredients:
1-2 c leftover barbeque meat-anything goes: chicken, beef, pork (any meat can be used, but i prefer bbq leftovers)
bag of frozen mixed veggies
bag of frozen corn
2 cans creamed corn
1 can rotel
one medium onion, chopped
1/2 c chopped bell pepper
1/2 c chopped celery
2 tbsp minced garlic
4 c water
4 chicken boullion cubes
6 frozen mini ears of corn
1/2 tsp cayenne pepper
1 tsp basil
2 tsp parsley
1/2 c barbeque sauce
salt and pepper to taste
Directions:
1. Boil all ingredients together for about one hour, and enjoy!
