A yummy gluten-free, dairy-free pancake. I like these drizzled with honey.
Ingredients:
3/4 cup soymilk
1/2 lemon
1 egg
1/2 cup corn, pureed
1/2 cup corn kernel
1 tablespoon honey
2 tablespoons safflower oil
salt
1/2 teaspoon baking soda
1 1/4 cups quinoa flour
Directions:
1. Combine lemon juice and soy milk.
2. Add other ingredients.
3. Heat a skillet to medium. Add oil.
4. Drop spoonfuls of batter onto skillet and cook on each side until brown.
