my kids always ate vegetables if they were 'disguised' and not just plain old steamed ones, these are quick and tasty.
Ingredients:
1 cup cooked mashed potato
salt and pepper
1 tablespoon chopped parsley
1 teaspoon baking powder
1 tablespoon onion, chopped fine
1/2 cup flour
1 can corn kernel, drained
2 eggs
1/2 teaspoon curry powder
oil (for frying)
Directions:
1. Mix all ingredients together in large bowl.
