found this recipe in Country Living, added a few things and it was so good, that I should have doubled the recipe. Great for side dish for anything you have for main meal or great for a leftover by itself
Ingredients:
1 can (14 oz) corn or 1 bag of frozen
1 red pepper chopped
1 onion chopped
2/3 cup of shredded cheddar cheese or (mix of colby/monterey)
1/3 cup shredded mozzerella
1/3 cup parmesan cheese
2 tbsp flour
1-1/2 tsp ground mustard
1/2 tsp salt
1/2 tsp garlic
2 eggs
1 (12 oz) evaporated milk
Directions:
1. Preheat oven to 350
2. Lightly brush a 2 quart baking dish with olive oil (do not use a casserole pan as it does not cook well) (use a baking dish)
3. In medium bowl, toss corn, red pepper, onion, cheeses, flour, mustard, salt & garlic till mixed
4. In another bowl, whisk eggs with milk
5. Stir egg mixture into corn mixture (make sure mixed)
6. Pour into prepared pan
7. Top with addition shredded cheeses
8. Bake for 45 minutes or till set
