These little cakes are good just buttered and eaten as is or with beans, fish, or whatever you like with them.
Ingredients:
3 cups cornmeal (white)
1/2 teaspoon baking soda
1 1/4 cups buttermilk
1 1/4 cups water
1 teaspoon salt
1 teaspoon sugar
1 teaspoon baking powder
3 tablespoons shortening
Directions:
1. Mix ingredients and form into flat cakes about the size of your hand.
2. Place on cookie sheet and bake at 425° until brown, about 25 minutes.
