Ingredients:
2 cups corn (shell) pasta
1/2 cup cooked black beans
1 tomato, seeded and chopped
1/4 cup extra virgin olive oil
1/4 cup lime juice
1 clove garlic, minced
1/4 teaspoon cumin
1/4 cup scallions, white part only, chopped
Directions:
1. Cook pasta according to package directions. Drain, rinse and cool. Add beans and tomato to pasta.
2. Mix dressing ingredients in a blender. Pour over pasta and mix well. Serve at room temperature.
