Ingredients:
1 1/4 cups all-purpose flour
1 cup cornmeal
1/4 cup granulated sugar
4 teaspoons baking powder
1/2 teaspoon salt
1 egg
1/4 cup cooking oil
1 cup milk
Directions:
1. Stir together flour, cornmeal, sugar, baking powder, and salt in a large bowl.
2. Make well in center.
3. In a separate bowl, beat egg until frothy.
4. Mix in cooking oil and milk.
5. Pour into well and mix only until moistened.
6. Batter will be lumpy.
7. Fill greased muffin cups 3/4 full.
8. Bake in 400 F oven for 20-25 minutes, then remove.
