~A Sweet Potato Corn Bread...baked in cast iron corn stick pans~
Ingredients:
2 medium sweet potatoes,cooked and mashed ( 1-1/2 cups)
1/2 cup buttermilk
1/3 cup butter,melted
2 farm fresh eggs
1 cup yellow cornmeal
1 cup flour
1/3 cup sugar
2-1/2 teaspoons baking powder
1 teaspoon cinnamon
1/2 teaspoon allspice
1/2 teaspoon salt
Directions:
1. Brush the cast iron corn stick pans with oil and heat in oven for about 10 minutes.
2. In bowl,combine sweet potatoes,buttermilk,butter,and eggs,mix until smooth.
3. In another bowl,combine remaining ingredients.
4. Add to sweet potato mixture,stirring just until combined.
5. Fill the prepared pans 2/3 full with the batter.
6. Bake in 400 degree oven for 15 to 20 minutes(or) until golden brown,around the edges.
7. Serve warm with honey butter.
