This is a very easy way of achieving delicious corn fritters. Great when fresh corn is out of season, but tastes good throughout the year, I serve these with warmed maple syrup.
Ingredients:
17 ounces creamed corn
1/2 cup milk
1 egg, beaten
8 1/2 ounces jiffy corn muffin mix
Directions:
1. Empty can of corn into large bowl.
2. Rinse empty can with the 1/2 cup milk.
3. Add to corn.
4. Add beaten egg.
5. Add corn muffin mix and stir to combine.
6. Heat large skillet with oil to cover bottom.
7. Cook like pancakes, turn when edges start to look dry.
8. One tablespoon makes a good size fritter.
