Corn Flake Cookies

Ingredients:

  • 1 tsp vanilla
  • 1 -1 1/3 cup sugar (i found these too sweet so i use 1 cup )
  • 1 cup chopped pecans (i've used walnuts)
  • 3 cups corn flakes

Directions:

  1. Preheat oven to 325°F.
  2. In large mixing bowl beat egg whites until foamy.
  3. Stir in cream of tartar and vanilla.
  4. Gradually add sugar beating until stiff and glossy.
  5. Fold in pecans, coconut and cornflakes.
  6. Drop by rounded measuring tablespoon onto well greased or parchment lined baking sheets.
  7. Bake for about 20 minutes or until lightly browned.
  8. Remove immediately and place on wire rack to cool.
