Great corn chowder with lots of veggies
Ingredients:
1 1/2 tbs. oil
2 onions chopped
1 stalk celery chopped
1 red bell pepper seeded and diced
3 cloves garlic minced
3 1/2 cups vegtable stock
1 teapoon thyme
1 bay leaf
2 cups frozen corn kernels
1 potatoe peeled and diced
2 tbs, corn starch
12 oz. evaporated skimmed milk
salt and pepper to taste
1 large covered pot
Directions:
1. Heat oil over low heat
2. Add onions and cook 5 minutes or untill translucent
3. Add celery red pepper Garllic and cumin stir 2-3 minutes
4. Add stock Thyme nd Bay Leaf bring to boil
5. Reduce to a simmer and cook 10 minutes
6. Add Corn and Potatoe continue to simmer 5-10 minutes
7. or untill veggies are tender
8. Combined cornstarch and Milk
9. Blend into soup
10. Season with salt and pepper
